Ingredients Overview

Gather the following ingredients to create this delightful one-pot meal:

  • Cheese Tortellini

  • Spicy Italian Sausage

  • Tomato Soup

  • Spinach

Preparing the Dish

Step 1: Sauté the Sausage

Start by heating a large pot over medium heat. Add 1 pound of spicy Italian sausage, breaking it apart with a wooden spoon as it cooks. Sauté until the sausage is browned and cooked through, roughly 5-7 minutes.

This important first step releases the savory flavors of the sausage into the pot, creating a tasty foundation for the rest of the dish.

Step 2: Add the Tomato Soup

Once the sausage is cooked, pour in a 28 oz carton of tomato soup. Stir well to combine the sausage with the soup, allowing the flavors to meld together.

I recommend the tomato and feta soup from Trader Joes!

Step 3: Incorporate the Cheese Tortellini

Next, add 12 oz of cheese tortellini to the pot. Gently stir to ensure that the tortellini is fully submerged in the soup.

Cooking the tortellini in the soup allows it to soak up the delicious flavors, making each bite deliciously satisfying.

Step 4: Add Spinach

After letting the tortellini cook for about 5 minutes, toss in 2 cups of fresh spinach. Stir until the spinach wilts and brightens, which should take just a couple of minutes.

Step 5: Season to Taste

Finally, taste the soup and adjust the seasoning as needed. Consider adding a pinch of salt, black pepper, or even a dash of red pepper flakes if you’re in the mood for more heat.

Top with basil and parmesan cheese.

Enjoy!
