Feel free to adjust the quantities based on your preferences or what you have available.
Preparing Your Sheet Pan Chicken
Step 1: Preheat the Oven
Start by preheating your oven to 400°F (200°C). This ensures that your chicken and vegetables cook evenly and thoroughly.
Step 2: Chop Your Vegetables
While the oven heats up, chop all your vegetables into uniform sizes. Place them on a large baking sheet, drizzle avocado oil and add seasonings of choice. Spread the vegetables out to avoid overcrowding.
Step 3: Season the Chicken
Next, season your chicken breasts with 2 tablespoons of olive oil, salt, pepper, and your chosen herbs. This adds flavor to the chicken, making it juicy and delicious.
Step 4: Combine Everything on the Sheet Pan
After seasoning the chicken, place it on the same baking sheet as the vegetables. This saves on dishes and allows the flavors to meld together as they cook.
Step 5: Cover and Bake
Cover the pan with aluminum foil to keep moisture in. Once your oven is preheated, place the sheet pan inside and bake for about 20 minutes. Keep in mind that baking time can vary. Chicken breasts should reach an internal temperature of 165°F (74°C) to be safe.
Serving
Once your sheet pan chicken is done baking, remove it from the oven and let it rest for a few minutes. This allows the juices to redistribute, ensuring that every bite is flavorful.
You can serve this dish as is or pair it with a side salad or whole grains like quinoa or brown rice for a more filling meal. The leftovers make for an excellent lunch the next day, providing you with a quick meal on the go. Happy Halloween!!
Enjoy!
